Indulge in Syrniki - crispy Russian cheese patties, perfect for breakfast or dessert. Top with jam or sour cream for a delightful treat.
Ingredients:
  • 2.25 pounds quark cheese
  • 0.66666668653488 cup all-purpose flour, sifted
  • 0.25 cup white sugar
  • 0.25 cup raisins, or to taste
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon vanilla extract
  • 2 pinches salt
  • 0.25 cup all-purpose flour, or as needed
  • 0.25 cup vegetable oil, or as needed
Instructions:
  • Achieve a powdery consistency by straining or processing quark cheese. Combine quark cheese, 2/3 cup flour, sugar, raisins, eggs, baking soda, vanilla extract, and salt in a bowl, mixing until well combined.
  • Add 1/4 cup of flour to a small bowl.
  • Shape 2 tablespoons of batter into a ball, coat with flour, then flatten into a 2-inch patty, squaring off the edges.
  • In a skillet over medium-low heat, heat 1 1/2 tablespoons of oil. Cook the patties in batches until dark brown with a crispy shell, about 3 to 4 minutes per side. Place on a paper towel-lined plate and repeat with the remaining oil and patties.
