Russian cottage cheese pancakes fried to golden perfection, served with a dollop of sour cream and sweet jam.
Ingredients:
  • 1 cup cottage cheese
  • 2 eggs, beaten
  • 3 tablespoons white sugar
  • 2 tablespoons semolina flour
  • 3 tablespoons all-purpose flour, plus extra for dusting
  • 0.33333334326744 cup canola oil for frying
Instructions:
  • Combine cottage cheese, eggs, and sugar until well mixed. Add semolina and all-purpose flour to form a soft dough. Transfer the dough to a floured surface, shape into a 1-inch thick log. Cut the log into 8 pieces and shape each into a patty with a dusting of flour.
  • Heat the oil over medium heat until hot, then fry the syrniki until golden brown on each side, about 3 to 4 minutes per side.
