Olivie: A delightful Russian potato salad with a mix of potatoes, carrots, peas, eggs, and pickles.
Ingredients:
  • 2 large potatoes, peeled and sliced lengthwise
  • 3 carrots, peeled and sliced lengthwise
  • 1 (15 ounce) can sweet peas, drained
  • 3 dill pickles, chopped, or more to taste
  • 1 onion, finely chopped
  • 3 bologna slices, chopped
  • 2 hard-boiled eggs, chopped
Instructions:
  • In a large pot, combine potatoes and carrots with salted water and bring to a boil. Simmer over medium-low heat until tender, approximately 15 minutes. Drain and rinse with cold water until cool. Dice the potatoes and carrots.
  • In a large bowl, mix together potatoes, carrots, sweet peas, pickles, onion, bologna, and eggs. Gently stir in mayonnaise, sour cream, salt, and black pepper until well combined. Cover with plastic wrap and refrigerate for at least 30 minutes until cold.
