Ingredients:
  • 0.5 cup cooking sherry
  • 0.75 teaspoon white sugar
  • 0.75 teaspoon ground ginger
  • 2 tablespoons cornstarch
  • 0.75 teaspoon crushed red pepper
  • 0.5 teaspoon garlic powder
  • 2 pounds skinless, boneless chicken breasts, cut into bite-size pieces
  • 1 tablespoon vegetable oil
  • 1 large green bell pepper, sliced
  • 1 large onion, quartered
  • 0.5 cup whole cashews
Instructions:
  • Combine soy sauce, sherry, sugar, ginger, cornstarch, crushed red pepper, and garlic powder in a large glass or ceramic bowl. Add chicken, mix well to coat. Cover with plastic wrap and refrigerate to marinate for 1 to 2 hours.
  • Start by heating vegetable oil in a skillet over medium heat. Add bell pepper and onion, cooking until the onion is soft and translucent, about 5 minutes. Set aside on a plate. Lower the heat to medium-low, then add chicken and marinade to the skillet. Cook until chicken is no longer pink in the center, around 15 minutes. Toss in cashews and cook for 1 to 2 minutes. Finally, mix in the onion and bell pepper, heating everything through.
