Ta'ameya (Egyptian Falafel)

Classic Egyptian ta'ameya: crispy street food made with fresh herbs and fava beans, a delicious twist on traditional falafel.
Ingredients:
  • 2 cups dried split fava beans
  • 1 red onion, quartered
  • 0.5 cup fresh parsley
  • 0.5 cup fresh cilantro
  • 0.5 cup fresh dill
  • 3 cloves garlic
  • 1.5 teaspoons ground coriander
  • 1.5 teaspoons salt
  • 1 teaspoon ground cumin
  • 1 cup sesame seeds
  • vegetable oil for frying
Instructions:
  • In a large bowl, submerge fava beans in several inches of water. Allow them to soak for 8 hours to overnight. Drain beans before using.
  • In a food processor, blend soaked fava beans with red onion, parsley, cilantro, dill, garlic, coriander, salt, and cumin until a dough forms.
  • Toast sesame seeds in a heated skillet over medium heat, stirring occasionally, for about 5 minutes until golden brown. Transfer to a large plate.
  • Form the fava bean mixture into approximately 50 balls, then coat them generously with sesame seeds.
  • Fill a large saucepan with enough oil to reach a quarter of the way up the pan; heat over medium heat. Fry fava bean balls in batches until beautifully golden, about 3 to 5 minutes per batch. Drain on paper towels.
