Apple tarte tatin

Indulge in a delectable apple pastry topped with warm caramel drizzle for a mouthwatering experience.
Ingredients:
  • 80g butter, melted
  • 1 (25 x 25cm) frozen sheet butter puff pastry, thawed
  • 2 (about 180g each) small Jonathan apples, cored, halved
  • 160g (2/3 cup) caster sugar
  • 250ml (1 cup) thin cream, whipped
Instructions:
  • Preheat your oven to 250°C and position a rack on the top shelf. Brush four 250ml (9.5cm diameter) ramekins with melted butter for greasing. Use one of the ramekins to cut out 4 pastry discs. Refrigerate the discs on a plate until needed.
  • In the bottom of each ramekin, position an apple half, cut-side up. Generously sprinkle 2 tablespoons of sugar over each apple and then drizzle 1 tablespoon of the remaining melted butter on top of each.
  • Place the ramekins on a baking tray and bake in a preheated oven until bubbling and the sugar begins to caramelize, about 15 minutes. Remove from the oven and reduce the temperature to 230°C.
  • Cover each ramekin with a puff pastry disc, pressing it down with a spoon to fully cover the apple. Bake for an additional 6-7 minutes until the pastry is crisp and golden.
  • Take the ramekins out of the oven, invert the apple tarte tatins onto plates, drizzle with remaining caramel, top with a dollop of cream, and serve promptly.
