Delight in a refreshing mint and parsley couscous salad.
Ingredients:
  • 1 cup Progresso™ chicken broth (from 32-oz carton) or vegetable broth
  • 1/2 cup uncooked couscous
  • 1 small cucumber, chopped (1 cup)
  • 1 small tomato, chopped (1/2 cup)
  • 1/2 cup chopped fresh parsley
  • 1/4 cup lime juice
  • 2 tablespoons chopped fresh mint leaves
  • 2 tablespoons vegetable oil
Instructions:
  • Bring the broth to a boil in a 2-quart saucepan. Add the couscous, then remove from heat. Cover and let it sit for 5 to 10 minutes until the liquid is absorbed.
  • Combine couscous and the rest of the ingredients in a large glass or plastic bowl. Chill in the refrigerator for at least 1 hour to enhance the flavors.
