Taco Chicken with Corn Salsa

Succulent taco chicken with zesty corn salsa, a quick and delicious Mexican meal.
Ingredients:
  • 1 envelope (1 1/4 ounces) taco seasoning mix
  • 4 boneless, skinless chicken breast halves (1 1/4 pounds)
  • 2 tablespoons vegetable oil
  • 1 can (11 ounces) whole kernel corn with red and green peppers, drained
  • 1 medium avocado, pitted, peeled and chopped
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon honey
Instructions:
  • Set aside 2 teaspoons of the taco seasoning mix in a medium bowl. Use the rest to coat the chicken.
  • In a 12-inch skillet, warm up the oil over medium heat. Add the chicken and cook for 3 to 5 minutes until nicely browned on both sides. Lower the heat to medium-low and continue cooking for about 8 minutes, turning the chicken once, until it is fully cooked through and no longer pink in the center.
  • Mix the remaining ingredients with the reserved taco seasoning and toss gently. Serve the salsa with the cooked chicken.
