Grill succulent shrimp kabobs for a quick 30-minute dinner delight.
Ingredients:
  • 3/4 lb uncooked deveined peeled medium shrimp, thawed if frozen
  • 1 medium zucchini, cut into 1-inch pieces
  • 1 medium red bell pepper, cut into 1-inch pieces
  • 1 cup fresh pineapple cubes
  • 8 (7-inch) bamboo or wooden skewers, soaked in water
  • 1 tablespoon from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1/4 cup lime juice
  • 1/4 cup olive oil
Instructions:
  • Preheat the grill. Skewer the shrimp, zucchini, bell pepper, and pineapple alternately, ensuring there is space between each piece.
  • Combine the taco seasoning mix, lime juice, and oil in a small bowl, then brush it over the kabobs. Save the extra mixture for later use.
  • Grill the kabobs over medium heat, cooking uncovered for 6 to 15 minutes. Turn them once, brushing with the taco seasoning mixture 2 to 3 times, until the shrimp is pink and the vegetables are tender.
