Whip up these tasty stuffed peppers in just 25 minutes for a delightful meal.
Ingredients:
  • 2 medium green bell peppers, cut in half lengthwise, seeded
  • 1/2 lb lean ground turkey or lean (at least 80%) ground beef
  • 2 tablespoons chopped onion
  • 2 tablespoons from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
  • 1 can (15.5 oz) kidney beans, drained, rinsed
  • 1 can (8 oz) tomato sauce
  • 1/4 cup sour cream
  • 1/4 cup shredded Cheddar cheese (1 oz)
  • 1/4 cup chopped tomato (1/2 small)
Instructions:
  • Preheat oven to 350°F. Boil 6 cups of water in a 2-quart saucepan. Add bell pepper halves and cook for 5 minutes until slightly softened. Drain and set aside.
  • In an 8-inch nonstick skillet, sauté ground turkey and onion over medium-high heat until turkey is cooked through; drain any excess fat. Add taco seasoning mix, kidney beans, and tomato sauce. Bring to a boil, then reduce heat and simmer for 5 minutes, stirring occasionally.
  • Arrange pepper halves in an ungreased 8-inch square (2-quart) glass baking dish and evenly spoon turkey mixture into each half.
  • Bake until peppers are tender, then garnish servings with sour cream, cheese, and tomato.
