Cheesy taco stuffed peppers: Bell peppers filled with seasoned beef, Mexican rice, and melty cheese - a perfect weeknight meal.
Ingredients:
  • 1 pound ground beef
  • 1 (1 ounce) package taco seasoning
  • 1 (8 ounce) box Mexican rice mix
  • 1 tablespoon butter
  • 4 bell peppers, tops and seeds removed
  • 1 (8 ounce) bottle spicy ranch dressing
  • 1 (8 ounce) package shredded Mexican cheese blend
Instructions:
  • In a hot skillet, brown the beef until crumbly, about 5 to 7 minutes. Drain any excess grease and stir in the taco seasoning.
  • In a saucepan, bring water, Mexican rice mix, and butter to a boil for 1 minute. Cover, reduce heat to low, and cook for about 25 minutes until water is absorbed. Stir in ground beef before serving.
  • 1. Boil water in a pot and cook green bell peppers until slightly softened, for about 5 minutes. Drain the peppers. 2. Stuff each bell pepper with beef-rice mixture. 3. Place the stuffed bell peppers in a baking dish. 4. Drizzle ranch dressing over the bell peppers and sprinkle each with Mexican cheese blend.
  • Roast in the oven until the peppers are soft and the cheese is gooey, about 45-50 minutes.
