Perfect your classic bolognese sauce for versatile use on pasta, lasagna, or jacket potatoes.
Ingredients:
  • 500g tagliatelle pasta
  • shaved parmesan cheese, to serve
  • 18.20 gm olive oil
  • 1 small onion, finely chopped
  • 1 carrot, finely chopped or grated
  • 1 stick celery, finely chopped
  • 2 garlic cloves, crushed
  • 500g lean beef mince
  • 140g carton tomato paste
  • 275.00 gm thick Italian tomato pasta sauce (passata)
  • 255.00 gm chicken style liquid stock
  • 125.00 gm white wine
  • 1/2 tsp dried oregano
  • 0.63 gm ground nutmeg
Instructions:
  • Create sauce: In a sturdy saucepan, warm oil over medium heat. Add onion, carrot, celery, and garlic. Sauté for 3 minutes until soft. Incorporate mince and sauté for 5 minutes until golden. Stir in tomato paste, pasta sauce, stock, wine, oregano, nutmeg, salt, and pepper. Combine thoroughly.
  • Bring the mixture to a boil, then lower the heat to medium-low and simmer uncovered for 35 to 45 minutes until it thickens. Season with salt and pepper to taste.
  • Boil tagliatelle in salted water as per packet instructions until al dente, about 12 minutes. Drain and plate on 4 serving dishes. Ladle sauce over pasta, then sprinkle with Parmesan cheese and freshly ground black pepper.
