Tagliatelle with minted pea sauce

Quick tagliatelle with fresh mint pea sauce: simple, vibrant dish for busy weeknights.
Ingredients:
  • 300g (2 cups) frozen peas
  • 2 garlic cloves, chopped
  • 1 lemon, rind finely grated
  • 40.00 ml fresh mint leaves, plus extra, to serve
  • 125ml (1/2 cup) crème fraîche
  • 40g (1/2 cup) shredded parmesan, plus extra, to serve
  • 350g dried tagliatelle
Instructions:
  • 1. In a large saucepan, bring salted water to a boil over high heat. Add peas and cook for 2 minutes until tender. 2. Using a slotted spoon, transfer cooked peas to a bowl. 3. Place 13⁄4 cups of the peas in a food processor. 4. Add garlic, rind, and mint to the peas in the food processor and process until a coarse paste forms. 5. Mix in crème fraîche and parmesan. 6. Season with pepper and continue processing until smooth.
  • Add the pasta to the pot of boiling water. Cook until "al dente" following the instructions on the packet. Drain and return to the pot.
  • Combine the pea mixture with the pasta, toss well, and season to taste. Gently stir in the rest of the peas. Serve by sprinkling extra parmesan and fresh mint on top.
