Creamy creme fraiche sauce elevates this 17-minute pasta dish.
Ingredients:
  • 300g (2 cups) frozen peas
  • 2 garlic cloves, chopped
  • 1 lemon, rind finely grated
  • 40.00 ml fresh mint leaves
  • 125ml (1/2 cup) creme fraiche
  • 40g (1/2 cup) Il Migliore Shredded Italian Grana Padano cheese
  • 350g dried tagliatelle pasta
  • Il Migliore Shredded Italian Grana Padano cheese, extra, to serve
  • Fresh mint leaves, extra, to serve
Instructions:
  • - Boil salted water in a large saucepan. Cook peas until they float (about 2 minutes). - Transfer 2 cups of peas to a food processor using a slotted spoon. Keep the remaining peas aside. - Combine garlic, lemon rind, and mint with the peas in the processor. Pulse until a coarse paste forms. - Add creme fraiche and cheese. Season with pepper. Blend until smooth. (Refer to Notes for serving suggestions)
  • At the same time, drop the pasta into the boiling water and cook until perfectly al dente. Drain and place back in the pan.
  • Combine the pea mixture with a vigorous toss. Season to taste, then gently fold in the reserved peas. Garnish generously with extra cheese and fresh mint leaves.
