Coconut water-infused basmati rice, garnished with cilantro and butter, is a perfect match for spicy curries.
Ingredients:
  • 2 cups coconut water, or as needed
  • 1 cup basmati rice
  • salt, or as desired
  • 1.5 tablespoons chopped fresh cilantro
  • 2 teaspoons unsalted butter
Instructions:
  • In a saucepan, bring 1 cup of coconut water to a gentle boil. Add basmati rice and salt, cover, and let it simmer. Stir occasionally, adding more coconut water as necessary, until the rice is tender yet firm, approximately 15 minutes.
  • After taking the rice off the heat, gently mix in fragrant cilantro and rich butter, then cover and allow the flavors to meld for an additional 5 minutes until the coconut water is absorbed.
