Overnight marinated tandoori chicken in yogurt and spices for an authentic Indian flavor.
Ingredients:
  • 2 pounds chicken, cut into pieces
  • 1 medium lemon, juiced
  • 1 teaspoon salt
  • 1.25 cups plain yogurt
  • 0.5 medium onion, finely chopped
  • 1 clove garlic, minced
  • 2 teaspoons garam masala
  • 1 teaspoon grated fresh ginger root
  • 1 teaspoon cayenne pepper
  • 1 teaspoon red food coloring
  • 1 teaspoon yellow food coloring
  • 2 teaspoons finely chopped cilantro
  • 1 medium lemon, cut into wedges
Instructions:
  • Prepare all your ingredients.
  • Peel off and discard chicken skin. Score meat and transfer to a shallow dish. Season both sides of chicken with lemon juice and salt. Allow to marinate for 20 minutes.
  • Combine yogurt, onion, garlic, garam masala, ginger, and cayenne pepper in a medium bowl until smooth, then gently fold in the food coloring.
  • Coat chicken with the creamy yogurt mixture, then cover and chill in the refrigerator for 6 to 24 hours for optimal flavor development.
  • Preheat the grill to medium-high heat and brush the grate with oil. Remove the chicken from the marinade and discard the extra marinade.
  • Grill chicken until cooked through and juices run clear, reaching an internal temperature of 165 degrees F (74 degrees C).
  • Top with fresh cilantro and serve with lemon wedges for a burst of flavor.
