Try this flavorful tandoori chicken for a crowd-pleasing dinner.
Ingredients:
  • 250.00 ml plain yoghurt (thick)
  • 1 garlic clove, crushed
  • 2cm piece ginger, peeled, grated
  • 21.00 gm lemon juice
  • 18.20 gm olive oil
  • 1 tsp garam masala
  • 1 tsp ground coriander
  • 1/2 tsp chilli powder
  • 1/2 tsp turmeric
  • 6 chicken thigh fillets, trimmed
  • Brown rice, cooked, to serve
  • Lemon wedges, to serve
Instructions:
  • In a large ceramic bowl, mix together yoghurt, garlic, ginger, lemon juice, oil, spices, and 1/2 teaspoon of salt. Make 2 slits on the top of each chicken thigh without cutting all the way through. Add chicken to the yoghurt mixture, coat well, cover, and refrigerate for at least 3 hours.
  • Preheat the oven to 220°C. Grease and line a large baking dish, then roast the chicken for 30 minutes or until fully cooked. Serve with rice and a squeeze of lemon.
