Tandoori lamb chops with melon sambal, ready in under 30 minutes! Delicious!
Ingredients:
  • 49.60 gm tandoori paste
  • 125.00 ml plain yoghurt
  • 8 lamb loin chops (see note)
  • 1/4 honeydew melon, finely diced
  • 1/2 small red onion, finely diced
  • 16.25 gm shredded coconut
  • 62.50 ml shredded fresh mint leaves
  • 1 small red chilli, finely chopped (optional)
  • Steamed basmati rice, to serve
  • Fresh coriander sprigs, to serve
Instructions:
  • In a small bowl, mix tandoori paste, 2 tablespoons of yogurt, and 1 tablespoon of lemon juice. Place chops in a shallow dish and brush them all over with the tandoori mixture. Let it sit for 10 minutes.
  • In a small bowl, mix the rest of the yogurt with 1 tablespoon of lemon juice. Season with salt and pepper, then refrigerate until ready to use.
  • Preheat a greased barbecue hotplate or grill over medium-high heat. Place lamb chops on the hotplate or grill. Cook for 3 to 4 minutes on each side for a medium doneness, or until cooked to your desired level.
  • In a medium bowl, mix together melon, onion, coconut, mint, chili (if using), and the rest of the lemon juice. Serve with chops, lemon yogurt, steamed rice, and coriander for a delicious meal.
