Tasty Tandoori wraps with yogurt dressing.
Ingredients:
  • 77.50 gm tandoori paste
  • 200g tub natural yoghurt
  • 2 chicken breast fillets, skinless, trimmed
  • 60g mixed salad leaves
  • 1 small red capsicum, seeded, thinly sliced
  • 1 small red onion, thinly sliced
  • 8 roti bread (see Notes)
  • Sweet mango chutney, to serve
  • 200g low-fat natural yoghurt
  • 1/2 Lebanese cucumber, seeded, finely chopped
  • 62.50 ml fresh coriander, chopped
Instructions:
  • Combine tandoori paste and yogurt in a large glass bowl. Add chicken and coat in the marinade. Cover and chill for at least 1 hour. (refer to Notes)
  • Mix together fresh salad leaves, crunchy capsicum, and crisp onion in a bowl.
  • Combine creamy Greek yogurt, freshly diced cucumber, and aromatic cilantro in a small bowl to create a flavorful dressing.
  • Preheat char-grill or barbecue on high. Grill chicken for 4-5 minutes on each side until cooked through. Slice thinly, cover, and keep warm.
  • Char-grill the roti bread for 2 minutes until flexible. Place the roti on a board with the grilled side facing down. Spread the roti with yogurt dressing and layer evenly with salad and sliced chicken.
  • Roll the bread into a spiral. Enjoy it alongside a delicious sweet mango chutney. Alternatively, create an open sandwich by topping roti bread with chicken, salad, and a drizzle of yogurt dressing as displayed.
