Transform boring chicken into a flavor-packed masterpiece with a handful of spices. Never hear complaints about chicken again.
Ingredients:
  • 8 boneless skinless chicken breast halves (2 pounds)
  • 1/2 teaspoon water
  • 1/4 teaspoon ground mustard
  • 1 cup plain yogurt
  • 1/4 cup lemon juice
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon each red and yellow food color, if desired
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon pepper
  • 1 garlic clove, crushed
Instructions:
  • Place the chicken in a glass or plastic bowl. Combine water and mustard, then mix in the remaining ingredients. Pour the marinade over the chicken and ensure it is well coated.
  • Chill in the refrigerator for a minimum of 12 hours, and a maximum of 24 hours.
  • Preheat oven to 375°F. Take the chicken out of the marinade and transfer it to a 13x9x2 inch rectangular baking dish without greasing the dish.
  • Bake for approximately 45 minutes or until the chicken juices run clear when the thickest pieces are cut. Add lemon slices for a fresh touch before serving, if desired.
