Tangerine, chocolate & vanilla salad

Easy and stunning citrus dessert, substitute clementines or satsumas for tangerines if needed.
Ingredients:
  • 20 g blanched almonds
  • 1 vanilla pod
  • 1 teaspoon golden caster sugar
  • 8 tangerines
  • a few sprigs of fresh mint
  • 50 g quality dark chocolate, (70%)
Instructions:
  • Prepare the almonds by toasting them in a dry pan over medium heat until golden, tossing occasionally. Transfer them to a bowl to cool. Split the vanilla pod in half lengthwise and scrape out the seeds. In a small pan over high heat, combine 4 tablespoons of water, sugar, vanilla pod and seeds, and juice from 4 tangerines. Let it simmer for 5 to 8 minutes until thickened into a syrup. While the syrup cooks, peel and finely slice the remaining tangerines and arrange on a platter. Roughly chop the toasted almonds and pick mint leaves. Drizzle the syrup over the tangerines, then top with almonds, mint leaves, and chocolate shavings before serving.
