Elevate potato salad with zesty pesto-yogurt dressing, ideal for pairing with BBQ favorites.
Ingredients:
  • 1.5 pounds red potatoes, diced
  • 0.5 cup fat-free plain yogurt
  • 0.5 cup light mayonnaise
  • 4 hard-boiled eggs, diced
  • 2 tablespoons sweet pickle relish
  • 2 teaspoons dried pesto seasoning
  • 1 teaspoon paprika
  • celery salt, or to taste
  • ground black pepper to taste
Instructions:
  • In a large pot, immerse the potatoes in salted water and bring to a boil. Let simmer over medium-low heat until tender, approximately 15 minutes. Drain and allow to cool.
  • Combine yogurt, mayonnaise, eggs, pickle relish, pesto seasoning, paprika, celery salt, and black pepper in a bowl. Gently fold in potatoes until evenly coated. Refrigerate for 1 hour before serving.
