Thai napa cabbage salad with cucumber, peppers, cilantro, peanuts, and chili-lime dressing - ideal accompaniment for grilled meats.
Ingredients:
  • 2 limes, juiced
  • 1 tablespoon Asian red chili paste
  • 1 tablespoon white sugar
  • 1 teaspoon grapeseed oil, or more as needed
  • 1 small head napa cabbage, shredded
  • 2 carrots, shredded
  • 1 small red bell pepper, thinly sliced
  • 0.5 seedless cucumber, sliced paper-thin
  • 0.33333334326744 cup cilantro, chopped
  • 0.5 cup peanuts, chopped, or more to taste
  • salt and ground black pepper to taste
Instructions:
  • In a small bowl, combine lime juice, chili paste, and sugar. Slowly drizzle in the oil while continuing to whisk.
  • In a large bowl, mix napa cabbage, carrots, bell pepper, cucumber, cilantro, and peanuts. Season with salt and pepper. Drizzle dressing over the vegetables and toss with tongs until coated. Refrigerate the salad for at least 1 hour. Stir and season to taste before serving.
