Tarragon balsamic potatoes

Elevate your Sunday roast with this sensational side dish.
Ingredients:
  • 1.5kg small lady christl potatoes, unpeeled
  • 3 green onions, chopped
  • 18.20 gm olive oil
  • 3 tsp chopped fresh tarragon
  • 40.00 ml white balsamic vinegar
Instructions:
  • 1. Preheat the oven to 180°C/160°C fan-forced. 2. Place potatoes in a saucepan and cover with cold water. 3. Bring to a boil over high heat, then simmer on medium-low for 8 to 10 minutes until potatoes are just tender. 4. Drain the potatoes.
  • Place the potatoes in a baking dish, sprinkle with onion, drizzle with oil, and season with salt and pepper. Bake for 30-40 minutes, turning halfway through, until golden brown.
  • Sprinkle tarragon over potatoes, drizzle vinegar, toss well, then serve.
