Mixed beans with leeks & tarragon

Versatile side dish for fish or a satisfying vegetarian main course.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 2 leeks, trimmed, sliced
  • 1 garlic clove, sliced
  • 500g mixed beans (green, flat and butter), trimmed, cut in half
  • 250ml vegetable stock
  • 60ml cream
  • 80g pkt baby rocket leaves
  • 20.00 ml chopped fresh tarragon
  • Salt & freshly ground pepper
Instructions:
  • In a large frying pan or wok over medium heat, warm the oil. Sauté leeks and garlic for 3 minutes. Stir in beans and stock. Season with salt and pepper. Simmer covered on low heat for about 5 minutes until beans are tender.
  • Pour in the cream and bring it to a boil. Let it simmer for 3 minutes until slightly reduced, then fold in the rocket and tarragon.
