Mixed beans with garlic & rosemary cream

Creamy protein-packed bean side dish.
Ingredients:
  • 250g thin green beans, tops trimmed
  • 300ml thickened cream
  • 1 garlic clove, crushed
  • 20.00 ml chopped fresh rosemary leaves
  • 400g canned cannellini beans, rinsed, drained
  • 400g canned butter beans, rinsed, drained
  • 400g canned small broad beans, rinsed, drained (or 250g shelled fresh or frozen broad beans)
Instructions:
  • Boil the green beans in a saucepan for 1-2 minutes, then quickly cool them in cold water. Drain and they're ready to use.
  • In a saucepan, bring the cream to a boil. Lower the heat to medium-low and simmer for 10 minutes until the cream is reduced by half. Add garlic, rosemary, cannellini beans, butter, and broad beans. Cook on low heat, stirring, until heated through, then stir in the green beans. Serve hot.
