Ingredients:
  • 150g green beans, trimmed
  • 150g sugar snap peas, trimmed
  • 150g snow peas, trimmed
  • 1 lemon
  • 13.80 gm extra-virgin olive oil
  • 1 garlic clove, crushed
Instructions:
  • Steam beans and peas in a metal steamer over simmering water for 5 minutes, until they are vibrant green and tender.
  • Using a citrus zester, zest the lemon and juice it. Combine oil, garlic, and 2 teaspoons of lemon juice in a bowl and whisk together.
  • Place vegetables in a bowl. Drizzle with oil mixture, season with salt and pepper, gently toss to combine, sprinkle with lemon rind, and serve.
