Steamed Christmas Pudding

Steamed mincemeat mixed with cranberry sauce, pumpkin puree, eggs, flour, butter, and sugar, topped with a decadent creamy frosting.
Ingredients:
  • 1.5 cups self-rising flour
  • 1 teaspoon ground cinnamon
  • 0.25 cup melted butter
  • 0.5 cup prepared mincemeat pie filling
  • 0.5 cup whole cranberry sauce
  • 0.5 cup pumpkin puree
  • 1 (8 ounce) container sour cream
  • 1 (8 ounce) package cream cheese
  • 0.33333334326744 cup confectioners' sugar
Instructions:
  • Prepare your 2-quart lidded pudding mold by greasing it. Then, sift together the flour, sugar, and cinnamon, and set the mixture aside.
  • Combine eggs, butter, mincemeat, cranberry sauce, and pumpkin in a large bowl. Mix well, then add to the flour mixture. Stir until smooth and transfer the batter into a pudding mold.
  • Set up a steaming station in a large pot by positioning a rack inside and filling halfway with boiling water. Steam the pudding for 2 1/2 hours.
  • Occasionally monitor the pan and add extra water as necessary. Test for doneness by inserting a toothpick in the center. Then, when firm, set the pudding mold on a rack outside of the water for 10 minutes before unmolding.
  • Blend sour cream, cream cheese, and confectioners sugar to make a delightful sauce. Drizzle over warm pudding and enjoy.
