Steamed Christmas pudding

One batch of decadent fruit mince will elevate your Christmas baking to perfection!
Ingredients:
  • 250.00 ml plain flour
  • 150.00 gm self-raising flour
  • 2.50 gm mixed spice
  • 2.50 gm bicarbonate of soda
  • 750.00 ml Fruit mince (see related recipe)
  • 2 eggs, lightly beaten
  • 125g butter, melted, cooled custard, to serve
Instructions:
  • Prepare the 8 cup metal pudding basin by greasing it, then line the base with baking paper.
  • In a large bowl, combine sifted flours, mixed spice, and bicarbonate of soda. Add fruit mince, eggs, and butter. Transfer mixture into a prepared basin, smoothing the top, and securing the lid.
  • In a large saucepan, set up a steamer rack. Pour boiling water into the pan until it reaches halfway up the side of the steamer. Cover the pan and simmer over medium heat for 5 hours, replenishing with boiling water as needed.
  • 1. Once off the heat, carefully lift the steamer from the water and let it stand for 10 minutes before removing the lid and flipping the pudding onto a plate. Serve with custard.
