Create a flawless steamed pudding with this simple recipe.
Ingredients:
  • 250.00 ml plain flour
  • 150.00 gm self-raising flour
  • 2.50 gm ground cinnamon
  • 2.50 gm ground ginger
  • 2.50 gm bicarbonate of soda
  • 750.00 ml fruit mince (see notes)
  • 2 tsp finely grated orange rind
  • 2 eggs, lightly beaten
  • 125g butter, melted, cooled
  • Custard, to serve
Instructions:
  • Prepare the 8 cup metal pudding basin by greasing it and lining the base with baking paper.
  • Combine sifted flours, cinnamon, ginger, and bicarbonate of soda in a large bowl. Add fruit mince, orange rind, egg, and butter. Mix thoroughly. Transfer mixture to the prepared basin, smoothing the top. Lightly tap on the counter to eliminate air bubbles. Secure the lid in place.
  • Place the basin in a large saucepan filled halfway with boiling water. Cover and simmer over medium heat for 5 hours, adding more boiling water if needed. Remove from heat.
  • Gently remove steamer from hot water and let sit for 10 minutes. Uncover, invert pudding onto a heatproof plate, and serve with custard.
