Indulge in a decadent Christmas pudding, brimming with fruits and warm spices, steamed to perfection.
Ingredients:
  • 500.00 ml mixed dried fruit
  • 125.00 ml dried cranberries
  • 187.50 ml pitted dried dates, chopped
  • 62.50 ml diced dried apricots
  • 170.00 gm sultanas
  • 125.00 ml red glace cherries, quartered
  • 180.00 gm firmly packed brown sugar
  • 125g butter, chopped
  • 2.50 gm bicarbonate of soda
  • 2 tsp finely grated orange rind
  • 2 eggs, lightly beaten
  • 250.00 ml plain flour
  • 150.00 gm self-raising flour
  • 5.00 gm mixed spice
  • 62.50 ml brandy
  • Fresh cherries
  • Icing sugar mixture
  • Custard
Instructions:
  • Prepare an 8-cup metal pudding steamer by greasing it and lining the base with baking paper.
  • In a heavy-based saucepan over medium-high heat, combine mixed dried fruit, cranberries, dates, apricots, sultanas, cherries, sugar, butter, and 1 cup of cold water. Stir until the butter has melted and the sugar is dissolved.
  • Bring the mixture to a boil, stirring continuously for 5 minutes. Remove from the heat, then gently stir in the bicarbonate of soda. Transfer the mixture to a heatproof bowl and let it cool for 30 minutes.
  • Combine orange rind, egg, flours, mixed spice, and brandy until thoroughly mixed. Transfer mixture into a greased steamer, smoothing the top. Secure the lid and place the steamer into a large saucepan. Pour boiling water halfway up the side of the steamer. Cover the pan and simmer over medium heat for 4 hours and 30 minutes, adding more boiling water as needed.
  • Take the pan off the heat. Gently lift the steamer from the water. Let it sit for 10 minutes. Remove the lid, then unmold the pudding. Garnish with cherries and a sprinkle of icing sugar. Enjoy warm or cold with custard.
