Festive summer side dish, ideal for holiday meals.
Ingredients:
  • 2 red capsicums, quartered
  • 200g green beans, trimmed
  • 200g yellow butter beans, trimmed
  • 200g flat (Roman) beans, trimmed
  • 2 tomatoes, seeds removed, finely chopped
  • 40g pine nut
  • 60ml olive oil
  • 20.00 ml balsamic vinegar
Instructions:
  • 1. Preheat the grill to high heat. Grill the capsicums with the skin side up for 5-7 minutes until the skin is charred and blistered. Place the grilled capsicums in a heatproof bowl, cover with plastic wrap, and let them cool for 5 minutes.
  • Add the beans to a large saucepan of salted boiling water and cook them for 2-3 minutes until they are tender yet crisp. Quickly cool them in cold water and then drain thoroughly.
  • After the capsicum has cooled, gently remove the skin, finely chop it, and place it in a bowl with tomato, pine nuts, oil, and vinegar. Mix everything together well and season to your taste.
  • Transfer the beans to a large serving plate and generously spoon over the flavorful capsicum mixture. Serve immediately for a delightful dining experience.
