Ingredients:
  • 500g mixed beans (like snake, green & butter beans), topped, tailed
  • 1 small red capsicum, de-seeded, finely chopped
  • 1 medium red onion, chopped
  • 35g (1/4 cup) lightly salted peanuts
  • 60mls (1/4 cup) fresh lemon juice
  • 185mls (3/4 cup) peanut oil
  • Salt & ground black pepper
Instructions:
  • Cut beans into 8cm lengths, then blanch them in a pot of boiling water for 4 minutes until tender-crisp. Drain and rinse with cold water to refresh before draining again.
  • Combine zesty lemon juice with smooth peanut oil in a jar with a screw-top lid. Shake vigorously until emulsified. Finish by seasoning with a pinch of salt and a crack of pepper to elevate the flavors.
  • In a serving bowl, mix together the beans, red capsicum, red onion, and dressing until well combined. Top with peanuts before serving.
