Braised lettuce and peas with herbs

Transform lettuce with braising for a flavorful, healthy green side.
Ingredients:
  • 75g butter
  • 2 leeks, pale section only, washed, thinly sliced
  • 1 garlic clove, crushed
  • 2 tsp chopped fresh thyme
  • 250ml (1 cup) chicken style liquid stock
  • 350g green round beans, topped
  • 350g frozen peas, thawed
  • 3 baby cos lettuces, outer leaves removed, quartered
  • 82.50 ml chopped mixed fresh herbs (such as mint, chives and parsley)
Instructions:
  • In a large frying pan over low heat, gently melt the butter. Add the leek, garlic, and thyme, then season with salt and pepper. Cook for about 5 minutes, stirring occasionally, until soft.
  • Pour in the stock and beans, and turn up the heat to medium. Let it cook for 5 minutes. Gently fold in the peas and lettuce, then cover and cook for 3-5 minutes until the veggies are tender. Finish by stirring in the herbs.
