Braised peas with bacon and lettuce

Indulgent braised peas with crispy bacon and lettuce - the ultimate roast side dish.
Ingredients:
  • 9.20 gm olive oil
  • 175g bacon, sliced into batons
  • 2 garlic cloves, thinly sliced
  • 4 spring onions, thinly sliced
  • 600g frozen peas
  • 60ml white wine
  • 125ml chicken stock
  • 20g butter
  • 750.00 ml shredded butter lettuce
  • Flat-leaf parsley sprigs, to serve
Instructions:
  • In a large frying pan over medium heat, sizzle the bacon in oil until crisp and golden, then toss in garlic and onions and cook for another 2 minutes.
  • Combine peas, wine, stock, and butter in a pot and simmer for 3 minutes or until the liquid slightly reduces. Toss in the lettuce and cook for an additional 2 minutes until wilted. Season with salt and pepper, sprinkle with parsley, and serve as a delightful roast side dish.
