Ingredients:
  • 40g butter
  • 2 garlic cloves, finely chopped
  • 1 leek, thinly sliced
  • 250ml chicken stock
  • 400g fresh peas or frozen peas
  • 2 baby cos lettuce, outer leaves removed, cut into 8 wedges
Instructions:
  • In a medium saucepan, melt the butter over high heat. Sauté the garlic and leek for 4 minutes until softened. Pour in the stock and bring to a boil, then simmer for 1 minute. Add peas and lettuce, cover, and cook for 2-3 minutes until tender. Season with salt and pepper. Serve in a bowl alongside duck confit and crispy potatoes.
