Peas braised with leek & mint

Elevate your favorite green veggies with a touch of decadence.
Ingredients:
  • 30g butter
  • 1 large leek, trimmed, thinly sliced, washed
  • 80ml (1/3 cup) white wine
  • 1 x 500g pkt frozen peas, thawed
  • 80ml (1/3 cup) chicken style liquid stock (see note)
  • 125.00 ml chopped fresh mint
Instructions:
  • In a saucepan over medium heat, melt the butter. Sauté the leek for 3 minutes until soft, stirring occasionally. Stir in the wine and cook for 2 minutes until slightly reduced.
  • Combine the peas and stock in the pot and simmer for 5 minutes until warmed. Gently fold in the fresh mint and season with salt and pepper to taste.
