Braised lettuce with peas and speck

Try our quick and delicious French side dish: Braised lettuce with peas and speck - ready in just 30 minutes!
Ingredients:
  • 200g speck, rind removed, cut into batons
  • 1 leek, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 2 baby cos lettuces, outer leaves removed, trimmed, quartered lengthways
  • 185ml (3/4 cup) chicken style liquid stock
  • 300g pea
  • 1 lemon, rind finely grated
  • Micro herbs, to serve
Instructions:
  • Preheat a large non-stick frying pan over high heat. Cook the speck for 5 minutes, stirring occasionally, until it is browned and crispy. Transfer to a paper towel-lined plate using a slotted spoon to drain.
  • Lower the heat, then cook the leek in the pan for 3 minutes until softened. Stir in the garlic for 1 minute. Add back the speck, lettuce, and chicken stock, and cook for 5 minutes. Mix in the peas and lemon zest, season, and simmer for 3 minutes until lettuce is tender and peas are cooked. Sprinkle with micro herbs before serving.
