Delicious braised lettuce complements any meal, perfect with pork chops or chicken.
Ingredients:
  • 20g butter
  • 36.40 gm olive oil
  • 1 leek, trimmed, halved, washed, sliced
  • 255.00 gm chicken style liquid stock
  • 125.00 ml frozen peas
  • 1/2 iceberg lettuce, cut into thin wedges
  • 20.00 ml roughly chopped fresh mint leaves
  • 4 (980g total) lamb forequarter chops, trimmed
  • Crusty bread, to serve
Instructions:
  • In a large non-stick frying pan over medium heat, melt butter with 1 tablespoon oil. Add leek and cook until softened but not browned, about 3 to 4 minutes. Add garlic and cook until fragrant, about 1 minute.
  • - Pour in the flavorful stock and bring the mixture to a lively boil. Toss in the vibrant peas and bring back to a boil. Reduce the heat to a gentle low, then introduce the fresh lettuce. Let it cook for 2 minutes or until the lettuce begins to wilt slightly (refer to note). Season the dish with a pinch of salt and pepper, and finish by sprinkling with fragrant mint.
  • Heat a chargrill pan over medium-high heat. Drizzle lamb with remaining oil, season with salt and pepper, and cook for 3 to 4 minutes on each side until done to your preference. Transfer to a plate, cover, and let it rest for 5 minutes before serving.
  • Plate the braised lettuce alongside the juicy lamb chops and a side of crusty bread.
