Tangy tarragon chicken salad topped with crunchy toasted almonds.
Ingredients:
  • 3 cups cubed, cooked chicken meat
  • 1.5 cups chopped celery
  • 0.25 cup chopped fresh chives
  • 0.5 cup plain low-fat yogurt
  • 0.25 cup reduced fat sour cream
  • 1.5 teaspoons dried tarragon
  • 2 tablespoons blanched slivered almonds
  • salt and pepper to taste
Instructions:
  • Mix together the chicken, celery, chives or green onions, yogurt, sour cream or mayonnaise, and tarragon in a large bowl. Chill in the refrigerator for 1 hour before serving.
  • Toast nuts in a dry skillet over medium heat, flipping regularly, until fragrant and lightly browned. Mix almonds into chicken salad, and season with salt and pepper to your liking. Serve promptly.
