Whip up a quick and refreshing herb chicken salad for a delicious weeknight dinner.
Ingredients:
  • 1 Hot Roast Chicken, skin and bones removed, meat shredded
  • 4 celery sticks, thinly sliced
  • 120g pkt Baby Rocket
  • 35g almond
  • 2 spring onions, thinly sliced
  • 250.00 ml mint leaves
  • 40.00 ml dill sprigs
  • 20.00 ml tarragon leaves
  • Lemon zest, to serve
  • Coles Bakery Rustic Baguette*, to serve
  • 150g mayonnaise
  • 60g sour cream
  • 11.80 gm wholegrain mustard
  • 40.00 ml coarsely chopped mint
  • 20.00 ml coarsely chopped tarragon
  • 20.00 ml coarsely chopped dill
Instructions:
  • For the flavorful herbed mayonnaise dressing, mix together mayonnaise, sour cream, lemon juice, mustard, mint, tarragon, and dill in a bowl. Incorporate 2 tablespoons of hot water and mix well. Season to taste.
  • In a large bowl, mix together the chicken, celery, arugula, almonds, spring onions, mint, dill, and tarragon. Portion the mixture onto serving plates evenly. Top with dressing, lemon zest, and serve with bread.
