Simply prepare ingredients on a baking tray, then bake until meat is golden and vegetables are crisp outside and tender inside.
Ingredients:
  • 8 (about 1kg) chicken drumsticks
  • 4 Red Rascal potatoes, coarsely chopped (see note)
  • 1 large sweet potato, peeled, coarsely chopped
  • 65g (1/3 cup) kalamata olives
  • 6 garlic cloves, unpeeled, halved lengthways
  • 2 tsp dried tarragon
  • 125ml (1/2 cup) white wine
  • Fresh tarragon leaves (optional), to serve
Instructions:
  • Preheat your oven to 200ºC. Place the chicken in a large baking dish and surround it with potatoes, sweet potatoes, olives, and garlic. Sprinkle everything with dried tarragon, salt, and pepper.
  • Bake the chicken for 40 minutes or until golden brown, then pour white wine over it and bake for 5 more minutes. Finish with a sprinkle of fresh tarragon, if desired.
