Tarragon Corn

Sweet corn simmered with shallots in butter and ouzo, then finished with fragrant tarragon.
Ingredients:
  • 4 tablespoons butter
  • 1/2 cup shallots, chopped (can sub onions)
  • 3 cups corn (from about 4 ears corn)*
  • 1 tablespoon an anise liqueur such as Ouzo, Pernod, Pastis or Sambuca (optional)
  • 1/2 teaspoon salt if using unsalted butter, more to taste
  • 1 tablespoon packed fresh tarragon, minced
  • Dash white pepper (or black pepper if white is unavailable)
Instructions:
  • Saute the shallots in butter: Melt butter in a medium saucepan over medium heat, then cook shallots until translucent, approximately 3 minutes.
  • Combine the corn, salt, and anise liqueur (or water if not using). Simmer covered on low heat for 15-20 minutes until the corn is tender.
  • Take the saucepan off the heat and gently fold in the fragrant tarragon. Season with pepper and additional salt to your liking.
