Impress your loved ones with a flavorful tarragon-seasoned beef roast for a comforting dinner.
Ingredients:
  • 1 boneless beef top round roast (3 to 4 lb)
  • 2 teaspoons salt
  • 1 teaspoon freshly ground pepper
  • 6 cloves garlic, finely chopped
  • 2 tablespoons dried tarragon leaves
  • 2 tablespoons olive oil
  • Fresh tarragon sprigs, if desired
Instructions:
  • Preheat your oven to 450°F. Grease a shallow roasting pan with cooking spray and place the beef in the pan. In a small bowl, combine salt, pepper, garlic, dried tarragon, and oil. Rub this flavorful mixture over all sides of the beef.
  • After baking uncovered for 15 minutes, lower the oven temperature to 350°F and continue baking for an additional 30 to 40 minutes until cooked to your liking. Let it rest covered for 15 minutes before slicing, then decorate with tarragon sprigs before serving.
