Tarragon-Mustard Sauce for Salmon

Creamy Dijon tarragon sauce, perfect for salmon.
Ingredients:
  • 1 tablespoon olive oil
  • 2 tablespoons finely minced shallots
  • 2 tablespoons dry white wine (such as Chardonnay)
  • 0.5 cup half-and-half
  • 2 tablespoons chopped fresh tarragon
  • 2 tablespoons Dijon mustard
  • salt and freshly ground black pepper to taste
Instructions:
  • In a small saucepan over medium heat, sauté shallots in oil until softened, approximately 2 minutes.
  • Deglaze the pan with white wine to capture all the flavorful brown bits. Let the wine evaporate, then gently pour in half and half, tarragon, and Dijon mustard while stirring. Reduce heat, stir continuously until the sauce thickens, about 2 minutes. Season with salt and freshly ground black pepper.
  • Ladle the luscious sauce over the succulent salmon before presenting it.
