Ingredients:
  • 4 French-trimmed lamb cutlets
  • 787.50 gm soy sauce
  • 3 cloves garlic, crushed
  • 1 tsp rosemary, finely chopped (optional)
  • 750.00 ml dried breadcrumbs
  • 193.13 gm milk
  • 250.00 ml plain flour
Instructions:
  • Mix together the soy sauce, garlic, and optional rosemary in a large marinating container.
  • Flatten cutlets with a meat mallet. Marinate the cutlets in the soy sauce mixture in the fridge for at least 30 minutes or longer.
  • Preheat your oven to 160C and line your oven trays with baking paper.
  • In a small bowl, gently mix together the egg and milk using a fork. Set aside.
  • Spread the flour on a plate or place it in a bowl, and set it aside.
  • Transfer breadcrumbs to a separate plate or bowl and set aside.
  • Take the cutlets out of the fridge and coat each one thoroughly in flour. Dip them in the egg mixture and then coat them entirely with the breadcrumbs.
  • Arrange the cutlets on the pans and bake for 30 minutes, flipping them once.
