Tea party fairy cakes

Make these adorable fairy cakes for a whimsical treat that's perfect for all ages. Enjoy decorating them for any celebration!
Ingredients:
  • 225 g unsalted butter at room temperature, plus extra for greasing
  • 225 g caster sugar
  • 4 large free-range eggs
  • 225 g self-raising flour plus extra for dusting
  • 1 lemon
  • 100 g fresh berries (raspberries, strawberries or blackberries)
  • 150 g icing sugar
Instructions:
  • Preheat the oven to 190˚C/375˚F/gas 5. Cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Sift in flour and fold in lemon zest. Divide batter into 18 paper cake cases. Bake for 15 minutes, then check for doneness with a cocktail stick. If needed, bake for another 5 minutes. Transfer cakes to a wire rack to cool. Mash 50g berries, blend in icing sugar for a smooth paste. Drizzle a teaspoon of icing over each cooled cake and top with remaining fruit slices.
