Create everlasting memories with a whimsical fairy cake for a birthday celebration.
Ingredients:
  • 2 x 340g packets golden butter cake mix or 2 quantities Homemade butter cake (see related recipe)
  • 250g butter, softened
  • 450.00 gm icing sugar mixture
  • 41.20 gm milk
  • Yellow gel food colouring
  • Yellow sanding sugar
  • 14 large jubes (see note)
  • 3 pink musk sticks, thinly sliced crossways
  • 20.00 ml large silver cachous
  • 2 pink sugar flowers
Instructions:
  • Preheat your oven to 180C/160C fan-forced, and generously grease a 6cm-deep, 22cm square cake pan. Line the base and sides with baking paper for easy removal later.
  • For a delicious cake, prepare the packet mix per the instructions, or make a Homemade butter cake. Pour the batter into a prepared pan, ensuring a smooth surface. Bake for an hour or until a skewer comes out clean when inserted in the center. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool.
  • Beat butter with an electric mixer until pale and fluffy. Gradually add icing sugar mixture and milk, beating constantly until combined. Tint with pale yellow color.
  • Trim the top of the cake with a serrated knife if needed. Flip the cake over. Use a template to cut out 2 wings from the cake. Ice the top and sides of the wings. Place the wings on a cake board with a 5mm gap between them. Smooth out the icing and gently press sanding sugar onto the wing sides.
  • Slice jubes thinly. Arrange the jube slices around the edge of the wings using a picture as a guide. Decorate with musk stick slices, cachous, and flowers. Sprinkle sanding sugar on top of the cake. Tie the doll's hair up with ribbon and position it in the center of the cake. Serve.
