Fairy treehouse cake

Transform your backyard into a magical fairy tale setting for an unforgettable birthday celebration.
Ingredients:
  • 2 ice-cream wafers
  • 3 x 440g packets golden butter cake mix (with icing sachet)
  • 108.90 gm raspberry jam, strained
  • 2 white honey jumbles biscuits
  • 18 x 30g Flake chocolate bars
  • 50g Dark Choc Melts, melted (see Notes)
  • 20 spearmint leaves, halved horizontally
  • 3 green snake lollies, thinly sliced lengthways
  • 2 yellow snake lollies, halved crossways
  • 1 orange snake lolly, cut into 3 pieces
  • 1 red snake lolly, cut into 3 pieces
  • 4 snake lollies, (2 orange, 2 red) extra
  • 8 strawberry and cream lollies
  • Black and red writing gel
  • 3 milk bottle lollies, trimmed
  • 5 yellow jelly beans
  • 5 orange jelly beans
  • 10 white jelly beans, halved lengthways
  • 1 strawberry flavoured sour straw, halved crossways
  • 2 red heart-shaped lollipops
  • 2 orange heart-shaped lollipops
  • 1 round black jube, split
  • 1/2 cm piece strawberry flavoured sour straw, halved lengthways, extra
  • 1cm piece licorice strap, thinly sliced into 16 pieces
  • 375g unsalted butter, softened
  • Reserved icing sachets (see Notes)
  • 375.00 gm icing sugar mixture
  • 30.90 gm milk
  • 20.00 gm cocoa powder
  • 5.20 gm milk, extra
  • Green gel food colouring
Instructions:
  • Preheat your oven to 180C/160C fan-forced and generously grease three 20cm round cake pans that are 7cm deep. Line the bases and sides of the pans with baking paper for easy removal later.
  • Set aside the icing packets from the cake mixes. Make the cakes according to the package instructions. Divide the batter between the prepared pans. Bake for 40 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 5 minutes, then invert onto wire racks lined with baking paper to cool completely.
  • For the buttercream icing, use an electric mixer to whip butter for 8 to 10 minutes until fluffy. Slowly add the reserved icing sachets and sugar mix, beating until fully combined. Pour in milk and mix well. Separate the icing into two bowls. In one, whisk in cocoa and extra milk until smooth. In the other, add green food coloring for a vibrant hue.
  • Level the tops of 2 cakes using a serrated knife. Place one trimmed cake in the center of a plate. Spread half of the jam on top. Add the second trimmed cake and spread the remaining jam over it. Place the final cake on top. Spread chocolate icing around the sides. Trim the base of honey jumble biscuits and position them at the front of the cake to create doors. Cut 16 Flake bars in half crossways and press them around the side of the cake, filling any gaps with the reserved trimmings.
  • Transfer 3/4 of the green icing into a piping bag with a 1cm leaf nozzle. Pipe leaf shapes on top of the cake. Fill another piping bag with the remaining green icing and fit it with a grass nozzle to pipe grass on the plate. Crumble the leftover Flake bars and scatter them around the base of the cake. Cut 3 rounds from the wafers using a 3.5cm round cutter and place them as stepping stones. Decorate the green icing with spearmint leaves. Create vines by tying green snake pieces at various lengths and inserting them into the icing. Press 2 yellow, 3 orange, and 3 red snake pieces into the top of the cake. Display the remaining yellow snake pieces, along with extra orange and red snakes, on the plate.
  • Prepare Lady beetle and Mushroom bites. Slice the 'strawberry' from strawberry and cream lollipops with a sharp knife, setting aside 3 pieces of ‘cream’. Follow the image to artfully pipe black gel onto the strawberries to create lady beetles. Use melted chocolate to affix 1/2 of the lady beetles to the cake's sides, pressing gently to adhere. Place the remaining lady beetles on top of the cake and plate. Use melted chocolate to attach the saved ‘cream’ to the cut end of milk bottles, crafting mushrooms. Secure the mushrooms to the plate with melted chocolate, then use red gel to form dots on top of the mushrooms.
  • Create adorable bumble bees by piping black gel on the curved side of yellow and orange bee bodies. Attach white jelly bean halves with melted chocolate to form wings. Let set for 5 minutes. Use melted chocolate to attach half the bees around the side of the cake and arrange the remaining bees on top.
  • Prepare Dragonflies and spiders: - Place sour straw halves on top of the cake according to the picture. - Insert lollipops next to sour straw halves to create wings for dragonflies. - Pipe eyes onto the dragonflies using black gel. - Attach extra sour straw pieces onto each jube half using melted chocolate. - Position 1 jube on top of the cake and 1 on the plate. - Attach licorice pieces to the jubes to form spider legs using melted chocolate. - Serve.
