Southern-style biscuits with buttermilk, refrigerated for a fluffy, high-rise perfection.
Ingredients:
  • 4 cups self-rising flour
  • 2 tablespoons white sugar
  • 0.66666668653488 cup shortening
  • 2 cups buttermilk
Instructions:
  • In a large bowl, combine the flour and sugar, sifting them together. Add the shortening and mix until the mixture resembles fine cornmeal. Using a fork, gently stir in the buttermilk until a soft dough comes together.
  • Transfer the dough onto a floured surface, gently removing any pieces that may be sticking to the bowl. Shape the dough into a ball and knead it 20 times until it becomes smooth and elastic. Wrap the dough in plastic wrap and let it refrigerate overnight.
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • On a floured surface, shape the dough to a 1-inch thickness. Cut into circles using a 2-inch biscuit cutter, pressing straight down and lifting up. Avoid twisting the cutter to ensure optimal rising. Space the biscuits 1 inch apart on an ungreased baking sheet and let rest briefly.
  • Bake in a preheated oven until lightly golden, for about 12 to 15 minutes. Let cool on a wire rack and enjoy warm.
